性狀(以下信息僅供參考)：黃褐色或類白色粉末。由米曲霉提取。在較高溫度條件下，此酶能迅速水解淀粉分子的精制α-1，4葡萄糖苷鍵，將淀粉分子從內(nèi)部任意切斷成長短不一的短鍵糊精和少量的低聚糖，從而使淀粉漿的粘度迅速下降。液化時間延長，還會產(chǎn)生少量的葡萄糖和麥芽糖
